Good Morning! I am excited to be back on schedule today after a very busy week around my house. We are doing some renovating and things are not finished completely, but life must go on. I do really like following a schedule because it keeps me organized and I seem to get a lot more done during the day. Obviously every day doesn’t always go as planned, but I am so happy when things begin to run smoothly after a few bumps in the road. I hope everyone is having a wonderful week!
Since my Overnight Banana Bread Baked Oatmeal was a huge hit with my family, I decided to try some great new flavor combinations in our oatmeal this week. Oatmeal is such a great, filling breakfast, so I try to make it quite a bit. This is best made the night before so that all the flavors combine well, and all you have to do is put it in the oven in the morning. With fresh strawberries filling the shelves at the grocery stores and the local fruit stands, I couldn’t wait to try them in some baked oatmeal. While you are getting ready for the day, this warm Strawberry Shortcake Baked Oatmeal bakes in the oven and fills the house with a delicious, sweet strawberry aroma. There is fresh strawberry goodness in every bite. To make this extra special, we love to top this warm oatmeal with some cool french vanilla yogurt to give it more of a strawberry shortcake feel. If you have some fresh strawberries in your kitchen and your family loves oatmeal, I hope you will give this yummy, seasonal recipe a try. It makes a “Berry Good Breakfast!”:)
Ingredients
- 1 lb. fresh strawberries, divided
- 3 cups old fashioned oats
- 1/2 cup white sugar
- 1/4 cup brown sugar
- 1 cup milk
- 2 eggs, lightly beaten
- 1/4 cup butter, melted and cooled
- 1/2 tsp. cinnamon
- 2 tsp. baking powder
- 1/2 tsp. pure vanilla extract
- 1 tsp. salt
Instructions
- Preheat the oven to 350 degrees.
- Rinse and hull the strawberries.
- Mash half of the berries with a potato masher.
- Chop the remaining berries into small pieces.
- In a large bowl, mix together all of the ingredients.
- Spread into a 8 x 8 inch baking dish or deep dish pie plate.
- Bake for 35 to 40 minutes or until the center looks set.
- Serves 6.
- *If making the night before, prepare as usual, refrigerate overnight and place in the oven when ready to bake in the morning.
- *If you are freezing this- prepare as usual and freeze unbaked. When you are ready to use the frozen oatmeal, defrost in the refrigerator overnight and bake as usual!
