The mornings have been really quite chilly here in Western New York this week, complete with a Freeze Advisory from the National Weather Service. I actually don’t mind the cold mornings as long as I have a cozy flannel shirt, a hot cup of coffee and a warm breakfast. I have many different versions of Baked Oatmeal that I like to make my family, but this Trail Mix Baked Oatmeal is pretty addicting! I don’t know if it’s all of the different flavors and textures from the crunchy nuts, baked chopped apple, or the sweet hint of cranberry, raisins or semi sweet chocolate that has me making double batches of this. As a mother, it always makes me feel good to send my children off to school knowing that they had a warm, healthy, filling breakfast. My family prefers this for breakfast over cold cereal any day! This oatmeal is also freezer friendly, so if you mix up a double batch you can have one for now and one waiting for you in the freezer for another day.
I’ve tried to make it a point the last few years to prepare double of any freezer friendly meal I am preparing. It saves me so much time in the long run and it really takes no more time than making the one dish. Ingredients
- 3 cups old fashioned oats
- 1/2 cup brown sugar
- 1 cup 2% milk
- 2 eggs
- 1/4 cup unsalted butter, melted and cooled
- 1 tsp. cinnamon
- 2 tsp. baking powder
- 1 tsp. pure vanilla extract
- 1 tsp. salt
- 1/4 cup almonds, coarsely chopped
- 1/4 cup walnuts, coarsely chopped
- 1/4 cup dried cranberries
- 1/4 cup raisins
- 1/2 apple, diced small
- 1/3 cup semi sweet chocolate chips
Instructions
- Preheat the oven to 350 degrees.
- In a large bowl, mix together all of the ingredients.
- Spread into a 8 x 8 inch baking dish or deep dish pie plate.
- Bake for 30 minutes or until the center looks set.
- Serve warm from the oven.
- Serves 6.
- *If you are freezing this- prepare as usual and freeze unbaked. When you are ready to use the frozen oatmeal, defrost in the refrigerator overnight and bake as usual!
