Well, Spring has put me in a great mood! Even though it’s very windy outside today, I don’t mind because the thermometer has hit 60 degrees! I’m trying not to get too excited, because it looks like we have a few chilly days in the upcoming forecast, but no snow! Now that is definitely something to be happy about 🙂 In the afternoon I opened our windows to let that all of that fresh Spring air in. On a windy day, 60 degrees does feel a little cool if you are sitting by the window though. While I was reading and enjoying the fresh air, I was also partially covered with my favorite blanket- my soft snowflake throw. I’m hoping that it is finally safe to put that away for the season! This warmer weather has also got me thinking about some great new sides dishes for Easter.
This tasty Tropical Coleslaw would be a great addition to your family’s Easter bunch or dinner. Freshly shredded cabbage is mixed with pineapple, mandarin oranges, chopped bananas, lemon, macadamia nuts and lightly toasted coconut and then blended into creamy, delicious Greek Yogurt for a sweet side that everyone is sure to love. The best part about this recipe is that all of the ingredients just happen to be good for you too! My children aren’t big on ham, so making a few very kid friendly yummy and healthy side dishes is important to me. Surprise your loved ones this Easter with this tropical take on coleslaw!
Ingredients
- 4 cups freshly shredded cabbage (I used my food processor)
- 1 medium carrot, shredded
- 2 cups freshly crushed pineapple, drained (I like to use only fresh pineapple because I think the canned has a metallic taste. I pulsed it in my food processor, then I drained it) + 1 Tbsp. reserved juice
- 1 cup fresh pineapple, chopped small
- 1 large banana, chopped small
- 3 mandarin oranges, segments separated
- 1/2 cup chopped macadamia nuts (You can find chopped macadamia nut pieces in the baking isle)
- 1/2 cup lightly toasted coconut flakes
- zest from 1 lemon + 2 Tbsp. freshly squeezed lemon juice
- 1 1/4 cups plain Greek Yogurt
- 1 1/2 Tbsp. sugar (optional, but I like to sweeten it a little more)
Instructions
- Combine all of the ingredients until well coated in a large mixing bowl.
- If the coleslaw looks dry, you can always add a little more yogurt.
- Place the coleslaw in your favorite serving dish and refrigerate and let the flavors mingle for about 30 minutes before serving.
- Serves a crowd 🙂
