The sun is shining and I’m ready for Spring…but there’s still snow on the ground and it’s only 30 degrees! ð Â Hey, I’ll take it though, because this feels like a heat wave compared to the temperatures we’ve had the last few months. Â As a matter of fact, this weekend we might even make it to 40 degrees around here! Â My weekend cleaning may include opening the windows (probably for only 5 minutes- I know that’s still cold) to let some lovely fresh air into my home. Â Do you open your windows when you get the slightest hint of Spring?
Because I am thinking Spring thoughts and dreaming about warmer weather, I’m making my family these yummy Tropical Fruit & Yogurt Parfaits.  These parfaits can be eaten for breakfast, a snack  or even dessert and are healthy and satisfying.  Creamy Greek Yogurt is layered in between freshly chopped pineapple, mango and sliced banana and then topped with toasted coconut and salted cashews for a tasty tropical treat!  This simple recipe takes only minutes to prepare and is fun for the whole family.  It makes 4 large parfaits, and can even be made ahead of time and stored in the refrigerator for later.  If you’ve got the winter blues and Spring hasn’t yet arrived at your doorstep, grab some yogurt and tropical fruit the next time you are at the grocery store and imagine yourself somewhere warm with this delicious snack.  Enjoy!
Ingredients
- 1 (32 oz.) container plain (if you can find coconut that would be delicious too) Greek yogurt
- 1 fresh pineapple, chopped small
- 1 fresh mango, diced
- 2 large bananas, halved, then sliced
- 1 cup flaked coconut, lightly toasted
- 1 cup salted cashews, lightly toasted if you like
Instructions
- Line up 4 large glasses, and your fruit and toppings, and form a little assembly line.
- Add evenly to the glasses, 3/4 of the pineapple (reserve the rest for topping), then yogurt, the mango, more yogurt, the bananas, more yogurt and then evenly top with toasted coconut,remaining pineapple and cashews.
- Serve immediately or cover with plastic wrap and store in the refrigerator until you are ready to serve.
- Makes 4 large parfaits.
