Thanksgiving is a special time of year. Family and friends gather for a wonderful meal together and take the day to enjoy each other’s company and to give thanks. Of course Thanksgiving is full of homemade foods that we may only get to enjoy a few times a year. A slow roasted stuffed turkey, complete with mashed potatoes, fresh green beans, cranberry sauce, biscuits and of course a few homemade pies for dessert make this special meal one the whole family looks forward to. These Thanksgiving Turkey, Cranberry & Brie Biscuit Sandwiches are perfect for your children’s table for dinner, or for those yummy leftovers the next day!
In our family, the day after Thanksgiving is always spent getting out our Christmas decorations. We might start the day with a little leftover dessert for breakfast and then everyone pitches in to decorate and get our home ready for the holidays.
The fun doesn’t stop there though. The day after Thanksgiving includes all of those delicious homemade foods for lunch and dinner again too! We like to keep that warm, cozy feeling with family going!
At our house we like to eat one meal served traditionally, just how it was the day before, but for the next meal we like to get creative with those leftovers! I always have Pillsbury Grands!® Biscuits on hand during the holidays for a quick, and delicious side. It’s one of those great items to stock up on during your next grocery shopping trip to Walmart.
Savory meals, even if they are leftover are always made even better served with warm biscuits fresh from the oven!
For these fun sandwiches, I used a leaf cookie cutter to shape the biscuits. After they baked, I used a sharp serrated knife to cut the biscuits in half so they would be perfect for a festive little sandwich.
I add a little turkey, some creamy Brie, a spoonful of my tasty Orange Cranberry Sauce and then put the top on and press down to ensure everything will blend together nicely when I pop them back in the oven for a few minutes.
This warms the biscuits back up and melts that delicious cheese together with the rest of the sandwich.
My four children love these yummy biscuit sandwiches so much that I do serve them at our Thanksgiving children’s table.
Sometimes they are so excited when family is over for Thanksgiving that they don’t really want to sit still and eat a big meal. These sandwiches are something fun they can grab and enjoy before they run off to play. They are happy and so are you because you know they ate well!

Ingredients
- 1 can Pillsbury Grands!® Original Biscuits, separated and/or cut into a fun shape and baked according to package directions
- Carved roasted turkey
- Cranberry Sauce
- Brie cheese (rind removed)
- gravy (optional)
Instructions
- After you've baked your biscuits, remove from the oven and let them cool for a minute. Leave your oven on.
- With a sharp serrated knife, cut the biscuits in half so you have two pieces.
- Add turkey, a drizzle of gravy (optional) a few pieces of Brie, and a spoonful of cranberry sauce to the sandwich.
- Top with the other half of the biscuit and gently push down and place back on the baking sheet.
- After all sandwiches are made, put them back into the oven for 5 minutes to warm them and melt the cheese.
- Serve warm.
- Enjoy!
