This oatmeal is a nice treat on a cold morning and make your whole house smell delightful. It tastes like a warm oatmeal cookie. Top with your favorite nuts and dried berries. My family loves this with oatmeal with a little warm milk poured over the top. This recipes freezes very well too. If you are going to freeze this, mix all ingredients and put in a freezer friendly container wrapped tightly with foil if you do not have a cover. Thaw overnight in the refrigerator and then bake as usual in the oven in the morning.
Ingredients
- 3 cups Rolled Oats (quick or old fashioned)
- 3/4 cup brown sugar
- 1 cup milk
- 2 eggs
- 1/4 cup butter, melted and cooled
- 2 tsp. cinnamon
- 2 tsp. baking powder
- 2 tsp. pure vanilla extract
- 1 tsp. salt
Instructions
- Preheat oven to 350 degrees.
- In a large bowl, mix together oats, brown sugar, cinnamon, baking powder, and salt.
- Beat in milk, eggs, melted butter, and vanilla extract. Spread into a 8x8 inch baking dish.
- Bake in preheated oven for 30-40 minutes.
