Good Morning! I hope everyone had a wonderful weekend! We set our clocks back early Sunday morning and gained an extra hour of sleep:) I needed it! I am so happy that my oldest daughter doesn’t have to get on the school bus in the dark too. The downside is that it is getting darker much earlier which cuts down on the time I have to work outdoors. I had all intentions of getting outside and planting more spring flower bulbs, but it was really cold here yesterday so I caught up on housework instead. I will have to get busy planting in a few days when the weather warms up. Do you plant bulbs in the fall? What are your favorite?
Because it was chilly out yesterday, I wanted to warm the house by baking a little something sweet in the oven. These White Chocolate Cranberry Oatmeal Cookie Bars are a tasty treat that takes only minutes to prepare. You simply mix up the cookie dough, spread into a 9 x 13 baking dish, bake, cut and serve. These bars are perfect for a last minute dessert and will feed a crowd. Left over cookie bars are a nice surprise when they are packed into a school lunch too. Ingredients
- 2/3 cup unsalted butter, softened
- 2/3 cup shortening
- 1 cups sugar
- 1 cup brown sugar, packed
- 2 eggs
- 1 tsp. vanilla extract
- 2 1/4 cups all purpose flour
- 1 1/2 cups old fashioned oats
- 1 tsp. baking soda
- 1 tsp. salt
- 1 (12 oz.) bag of White Chocolate Chips
- 1 (5 oz.) bag of dried cranberries
Instructions
- Preheat the oven to 375 degrees.
- In your Kitchen Aid Mixer, combine the butter, shortening and sugars and cream together until fluffy.
- Add the eggs one at a time and beat after each addition.
- Add the vanilla and mix.
- Scrape down the sides of the mixer to make sure everything is well blended.
- Add the dry ingredients and mix until a nice dough comes together.
- Stir in the cranberries and white chocolate chips.
- Spread dough in a 9 x 1 3 baking dish evenly.
- Bake for 30 minutes or until light golden brown on top.
- Remove from the oven and let cool.
- Cut into bars and serve with milk or hot chocolate.
- Serves 24.

I love planting bulbs in the Fall. But, I’ve stopped last year for the reason being that right before they get ready to explode with such beautiful color… the (blank) deer come over and have a meal out of ALL of them! Then they leave a little of something behind right in my yard!
Now speaking of this divine treat you made… white chocolate and cranberries are one of my favorite combinations for the holidays! (=

Gloria, have you ever tried Liquid Fence? It’s all natural and it keeps the deer away! When you spend all of that time planning out your flower garden and watching it grow, then to have that happen- ugh, I’d be upset too. I had that happen in my vegetable garden with some of my tomatoes and lettuce because part of the fence was low. They hopped right over and helped themselves…I was not happy! On a separate note, I totally agree- cranberries and white chocolate are wonderful together especially for the holidays:)
