Before my children get out of school at the end of June, I plan on having my freezer stocked with some great meals, snacks and desserts. I love “freezer cooking” and if you haven’t done it before you should consider giving it a try. I really take pride in feeding my family fresh, wholesome food that I made in my kitchen, without all of those preservatives that most frozen, fast, prepackaged foods have. I have found that you can freeze a lot of things! I really want to enjoy the time I spend with my children this summer, and planning and cooking ahead really seems to help me. Over the next month, I will be sharing some of my favorite, simple recipes and great freezer cooking plans with you if you would like to follow along. As mothers, we try to do so many things, that sometimes we feel really burned out at the end of the day. Planning ahead can take some of that pressure you are feeling away so your busy days this summer can run smoothly and be more enjoyable.
I love a yummy, sweet treat that only takes a few minutes to prepare. Cookie Bar type desserts are fantastic this time of year because they are quick to make and they feed a crowd. With a bunch of outdoor activities going on this summer, who has hours everyday to spend baking in the kitchen? These chewy White Chocolate Macadamia Nut Blondies are delicious. White Chocolate and Macadamia Nuts just go together, you know? These bars are perfect for a picnic, or even a bake sale. They are also perfect with your morning cup of coffee, but I don’t want to promote this as breakfast:) These also freeze very well if you want to package some up for later!
Ingredients
- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 2/3 cup white sugar
- 2 eggs
- 1 1/2 tsp. vanilla
- 2 2/3 cup flour
- 2 tsp. baking soda
- 1/2 tsp. salt
- 1 cup chopped macadamia nuts
- 1 cup white chocolate chips
Instructions
- Preheat your oven to 375 degrees.
- In your Kitchen Aid Mixer, cream the butter and the sugars until fluffy.
- Add the eggs and vanilla and mix together well.
- Add the flour, soda and salt and mix just until combined.
- Carefully mix in the nuts and chocolate.
- Press the batter evenly into a 9 x 13 glass baking dish.
- Bake for 30 to 35 minutes.
- Take out of the oven and let it cool completely before cutting into pieces and serving.
- Serves 18 to 24.
- If freezing, let cool and store in a wax paper lined, air tight container.
