Good Morning! I hope that you are enjoying Spring in your neck of the woods. I did see my daffodils finally starting to come up yesterday, but today is a wash out here. The wind is whipping around and there are puddles everywhere! I don’t mind though because I do love the coziness of being inside and snuggling with my family on a a rainy, stormy day. I decided that a hot cup of coffee with a piece of this warm freshly baked Banana Blueberry Bread was the best way to start my day today! I did all I could to grab myself a slice and get a quick picture of this before my 4 growing children gobbled up the whole loaf before school this morning! They thought this was the best breakfast. If you have ripe bananas on your kitchen counter and want to try a different type of banana bread, this recipe is amazing! The fresh blueberries are wonderful in this bread and you get a burst of sweet blueberry in every bite. This bread also freezes great so you may want to bake 2 loaves and freeze one for later. Enjoy!
Ingredients
- 1/2 cup unsalted butter, softened
- 1 cup sugar
- 2 eggs, lightly beaten
- 1 1/2 tsp. vanilla extract
- 2 cups whole wheat flour
- 1/2 tsp. salt
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 2 large ripe bananas, mashed
- 1 cup fresh blueberries
Instructions
- Preheat the oven to 350 and spray a large loaf pan with non stick cooking spray.
- In a Kitchen Aid Mixer, cream the butter and the sugar until it is light and fluffy.
- Add the eggs and the vanilla and beat until well combined.
- After sifting the dry ingredients, add them to the creamed mixture and mix until just combined.
- Add the mashed banana and mix.
- With a spatula, gently fold in the fresh blueberries.
- Pour batter into prepared pan and bake for 1 hour or until a toothpick inserted into the bread comes out clean.
- Let rest in pan for at least 20 minutes before moving to a cooling rack.
