Yesterday I was on a mission to make a few things for the freezer. Mission accomplished! I made 10 cheese omelets, 24 Morning Glory Muffins, and 2 batches of Warm Bake Oatmeal. My freezer is a bit full, but that’s good right? I held off on the pizza dough I was going to make and freeze and will try to do that this weekend. Here is a look at what I did for my omelets:
I have this amazing omelet pan from Williams- Sonoma. I use this a lot! It is just so easy. I beat 2 eggs and then pour them into the non stick pan….with a tiny bit of butter of course. Then you slightly roll the egg in the pan back and forth until it starts to even out and set, sprinkle with salt and pepper, and put in your desired fillings. I only used cheese because these were for the children and they are picky.
Then you can use a spatula or the fun little tool that comes with this pan to roll up the omelet. Then I made 9 more!
I set these aside to cool completely and then I wrapped them with 1 small paper towel and they fit perfectly into a snack sized baggie.
These can be taken out of the baggies and put on a plate with the paper towel still on and warmed up about 1 1/2 minutes depending on your microwave. You can always make omelets in a regular small pan too. They will be just as good! While I think nothing beats omelets fresh and hot from the pan to the plate , I like to have these in a pinch for a quick protein packed, filling breakfast.
