Wow! After that heat wave last week the zucchini in my garden were growing like crazy! What to do? Get baking of course:) My family just loves muffins, so I thought these would be wonderful for breakfast or a snack. Needless to say, these were gone in less than 24 hours! These Zucchini Chocolate Chip Muffins are really simple to make and are freezer friendly. The zucchini makes the muffins nice and moist and the chocolate chips add the perfect amount of extra sweetness for us chocolate lovers. I will definitely be whipping up a double batch of these to freeze later this week when I have more ripe zucchini in the garden. Ingredients
- 1 cup sugar
- 1/2 cup canola oil
- 1 1/2 tsp. vanilla
- 3 eggs
- 2 cups all purpose flour
- 1 cup whole wheat flour
- 2 1/2 tsp. baking soda
- 1/2 tsp. baking powder
- 1 tsp. salt
- 1 tsp. cinnamon
- 1/4 tsp. ground cloves
- 3 cups zucchini, shredded
- 1 cup semi sweet chocolate chips
- 1 Tbsp. raw sugar
Instructions
- Preheat the oven to 350 degrees.
- Line muffin tins with paper liners.
- In your Kitchen Aid mixer, combine the sugar, oil, eggs and vanilla.
- Sift together the flours, baking soda, baking powder, and salt.
- Slowly mix in the dry, sifted ingredients.
- Add the cinnamon and cloves and mix.
- Add the zucchini and mix.
- Mix in the chocolate chips.
- Fill the muffin liners 3/4 full and sprinkle with raw sugar.
- Bake for 18-22 minutes or until a toothpick inserted into the muffins comes out clean.
- Let cool 10 minutes before removing muffins to a cooling rack to finish cooling, unless you like to serve them warm:)
- *If freezing, cool completely and store in an airtight container or freezer bag.
- Makes about 16 muffins.
